- 2 lbs. chicken pieces (dark or light meat – whichever you prefer)
- ¼ cup flour
- ½ cup oat bran
- ½ tsp each of salt, pepper and garlic powder
- 1 tsp fresh parsley (or ½ tsp dried)
- 2 eggs
Heat oven to 375 degrees.
Mix flour, oat bran, salt, pepper, garlic powder and parsley. Place into a sturdy bag.
Lightly beat eggs in a medium-sized bowl.
Dip each chicken piece into the egg mixture, then into the flour coating.
Place into a Pyrex baking dish.
Bake at 375 degrees 30-45 minutes, turning once midway thru cooking, until outside is lightly browned and chicken is thoroughly cooked.
